Rather than popping in a microwavable burrito with the constistency and flavor of cardboard, try this easy recipe.
First, the shredded chicken:
- 1 1/2 lbs chicken thighs
- 1 teaspoon chili powder
- 2 cups chicken broth
- 1/4 onion, sliced
- pinch of salt
Peel back or remove the skins, and arrange in a lidded pan.
Add other ingredients, cover and simmer until chicken is done.
When chicken is done, remove and shred with a fork, or slice into small pieces.
Toppings:
You can top this with anything your heart desires.
Here we have:
Our shredded chicken
Head lettuce
Onion, diced
Tomato, seeded and diced
Refried beans
Cheddar cheese
Simply arrange your ingredients on a tortilla (I use flour tortillas).
Keep sticky stuff on the bottom to help everything stay in place.
To wrap, fold one side over, then fold over the bottom edge. Finish by tucking over the last side.
This way nothing drops out of the bottom end when eating.
I leave the top open for easy hot sauce application.
About 20 minutes of cooking time overall. 1.5 lbs of chicken will be enough for about 6-10 burritos, depending on how much you load them up.
