It has been called “egg in a basket,” “egg in toast,” “egg in the window,” “egg in a boat,” and a vast myriad of other titles; but the principle is essentially the same: a fried egg shoved into a slice of bread. Delicious.
Ingredients:
1 egg 1 slice of bread 1 strip of bacon (optional)
I start by frying up a strip of bacon, which greases up the pan nicely for the bread and egg. If no bacon is on hand, butter up the pan instead.
Properly fried, the bacon evacuates to a plate to make room for a slice of bread, which had been previously violated by a cup or round pastry cutter to make a nice hole in the center.
Enter: egg.
When the underside of Mr. Bread is nice and golden brown, flip him over. He won’t mind.
The egg should be set and an egg cataclysm (eggaclysm) should not happen.
It would not be wrong to sprinkle some cheese on top before eating. It would be very, very right.
Please don’t waste food: butter the disc of bread from the center and toast it. I like to dip it into the yolk and eat it, because I’m naughty.

I made this for my daughter for lunch. First time ever making it - for some odd reason I was afraid I’d mess up on the egg, but I didn’t. It came out perfectly. Sprinkled it with salt and pepper and cheese and my daughter LOVES it. Go easy lunches/breakfasts!
