Saimin is the frizzy, Hawaii-dwelling nephew of ramen, and can be fried rather than prepared in broth, for a super quick and cheap take-to-work meal.
Ingredients:
3 packages of instant ramen
1lb chicken, cut into strips
- 2 eggs
- 1/4 onion, sliced
- 1lb frozen vegetables
- 2 tablespoons oyster sauce
Cook and drain ramen noodles.
Chicken goes into the pan (I use a large wok).
As does the onion. Cook until chicken is done.
Add rest of ingredients, including two of the ramen flavor packets.
Add the oyster sauce if desired.
Two eggs go in as well.
You can cook it until its nice and crispy or serve as is.
Package everything up in cute “his” and “hers” lunch containers for tomorrow.
If I had bok choy (chinese cabbage) or fried beef, I’d add that too.
This takes about 10 minutes and makes 4-5 servings.

Even as I like a bodily keyboard, after handling the Samsung Captivate for roughly quarter-hour, it’s hard to go back. Right now I am debating whether to visit Verizon for the Droid X, go to Sprint for the EVO, or stay with AT&T for the Captivate…decisions, decisions.
