What’s not to love about muffins? They can be sweet or savory, they’re wonderful on-the-way-to-work breakfast foods, kids love ‘em, they’re great with a cup of coffee or milk, they can be healthy or heart-clogging — there’s too much to muffins to say.
This is an easy recipe for peanut butter muffins. It’s so simple, small children can do it! In fact, I recommend you teach your small children how to bake these morsels, then force them to bake muffins all day, raking in the profits as you sell delicious peanut butter muffins to your co-workers and neighbors. Would that be so wrong?
This recipe calls for a 12-cup muffin tin, and makes 12 servings (6 servings if everyone eats 2 muffins, and only 2 servings if two people eat 6 muffins each. Of course it’s only one serving if someone was to eat 12 muffins in one sitting, but that would be just silly, wouldn’t it?

It all begins with the dry ingredients:
- 2 1/4 cups flour (all-purpose)
- 1/2 teaspoon salt
- 2 teaspoons baking powder
Mix in a bowl and set aside.
And the wet stuff:
1/2 cup light brown sugar (3/4 cups if you like your muffins on the sweeter side) 2 eggs 2/3 cup smooth peanut butter 6 tablespoons (3/4 stick) of butter, melted 1 cup milk
I melt the butter in a measuring cup then add the cup of milk to cool it down. Everything goes into a mixing bowl and is whisked until it looks like a peanut butter smoothie.
Now get out a rubber spatula or some large mixing spoon and mix the dry and wet stuff together. Combine until all the clumps of dry stuff are gone, but don’t over-mix or it’ll turn into a paste!
Spoon the batter out into your muffin tin and bake at 375 for 15-18 minutes.
When done, empty out onto a clean kitchen towel and cool on a rack for half an hour.
It would not be a crime to add two cups of chocolate chips or your favorite nuts. It would also be fine and dandy if you were to slather the tops with jam before eating.
