Cheap Party Food
The trick for cheap party food is not to go BYOB, but to use a few affordable recipes that will yield enough food for all the guests. Such recipes can cover all the bases, like snacks (black bean dip, biscuit popovers, hummus, kettle corn, Mexican bean dip, salsa party dip), main dishes (black bean burgers, Carolina pulled pork barbeque, crockpot sloppy joes, grilled pizza, potato veggie burgers), sides (barbeque beans, black bean salad, Boston baked beans, coleslaw, grilled potato chips, mustard potato salad, oven fries, pasta salad, pita crisps,potato chips, potato salad, red cinnamon fruit).
A black bean dip can be made with 1 15 ounce can of drained and rinsed black beans; 1/2 cup of salsa; 1/2 cup of plain fat free Greek-style yogurt; 1/4 teaspoon of cumin and 2 tablespoons of chopped fresh cilantro. Place black beans and salsa in a blender and puree until smooth, spoon dip into a bowl, stir in yogurt, cumin and cilantro, and remember not to double dip. As for grilled pizzas as cheap party food, there are many types to choose from, such as Greek, feta, pork, sausage and bell pepper, Southwestern style, Philly style, Mexican, and pepperoni.
Potato salad is a foolproof cheap food party recipe that requires 2 lbs. of potatoes; 4 eggs; 3 stalks of chopped celery; 3/4 cup of mayonnaise; 2 tablespoons of mustard; 1 tablespoon of sweet pickle relish; salt and freshly ground black pepper to taste. Peel potatoes, cut them into 3/4inch chunks and place them in a 3-quart saucepan. Cover them with water and bring to a boil, then let boil uncovered for 12 to 15 minutes. When they are tender but still firm, drain. Prepare hard boiled eggs and put them in a medium saucepan, and cover them with water by one inch. Partially cover the pot with a lid. Bring eggs to a full, rolling boil for 30 seconds. Remove from heat, and cover completely. Let eggs stand for 15 minutes and then peel under cold running water. Place potatoes in a large bowl. Chop eggs, and add them to the potatoes. Add and mix the remaining ingredients. Cover and refrigerate until ready to serve this cheap party food.
