Cheap Food Recipes

It is not easy to have a varied menu and a tight budget, but there are quite a few cheap food recipes that are able to reconcile this seemingly disparate areas of home economy. What follow are a couple of easy cheap recipes as means of examples, but the fact remains that with some research and imagination, anyone will be able to come up with an alternative that will please their taste buds without hurting their pockets.

One example of cheap food recipes is marinated zucchini. The ingredients are 2 to 3 small zucchinis, two tablespoons of olive oil, four peeled and minced garlic cloves, one tablespoon of chopped fresh basil, one tablespoon of red wine vinegar and salt to taste. Slice the zucchinis into oval slices; heat the oil in a 12″ skillet, brown the zucchini on both sides, until cooked through; remove to a paper towel lined plate. Lower the heat and add the minced garlic and stir a few minutes. Lay out the zucchini slices in a dish and sprinkle with the chopped basil, vinegar, garlic, and some salt. Stir it all up and then let it sit a bit, covered. Serve at room temperature.

Another on is chicken soup with rice, which requires one tablespoon of oil; one peeled and sliced onion; one boneless, skinless chicken breast, partially thawed and diced; three stalks of diced celery; 2 -3 peeled and diced carrots; one minced clove of garlic; one thumb sized peeled and minced piece of ginger; four cups of chicken broth and two cups of water; one cup of raw rice; and salt and pepper to taste. Heat the oil and add the chopped onion, stirring and cooking. Add the diced chicken and cook until done, while peeling and dicing the celery and carrots. Add the celery and carrots while mincing the garlic and ginger. Stir and let cook a couple of minutes, then add the broth, water and rice. Bring to a simmer and cook until the rice is done.
